“Jamon serrano” (cured ham of white pork) is a product made with the musculoskeletal parts corresponding to the hind limb of the pork, subjected to a salting process, drying and maturation, (if appropriate, smoked) and deboned. It has a characteristic smell and taste, with a slight smoky touch if it has been subjected to this process.
Each boneless piece weights between 5,500 and 7,500 kg.
