Small Sardines from Galician fish markets are traditionally fished from the Atlantic Ocean. The small sardines are meticulously cleaned by hand, steamed for consistency, fried in olive oil to achieve the desired texture and prevent breaking, and finally preserved in a base of olive oil.

After being washed in warm salt water and meticulously cleaned, the sardines are fried in olive oil to achieve the desired texture and prevent breaking. They are then carefully placed in cans and covered with olive oil. It is recommended to let the product mature before consuming. The size of the sardines varies depending on the catch time, with sizes increasing towards September.
