Baby Squids in its Ink – 120 g

The baby squids are meticulously cleaned by hand and preserved in a sauce made from olive oil, onion, tomato, and fine wines, gaining their dark color from the ink.

This cephalopod, like octopus, requires a very delicate production process. In addition to a thorough cleaning, it needs to be cooked in very salty water to achieve the desired flavour. Once it has been turned inside out to complete the cleaning process, it is stuffed by hand. The sauce is then prepared using olive oil, onion, tomato and fine wines, adquiring dark colour due to the ink.
